HEALTHY ALMOND BUTTER COOKIES
We created a recipe for healthy almond butter cookies that you can enjoy as a healthy treat throughout the week. Healthy cooking is not only good for physical health but can also have a positive impact on mental health, and baking can be a great coping tool to help reduce stress and anxiety.
Ingredients:
- 1 cup almond flour 
- 1/2 cup natural almond butter 
- 1/4 cup maple syrup 
- 1/4 cup coconut oil, melted 
- 1 teaspoon vanilla extract 
- 1/4 teaspoon baking soda 
- 1/4 teaspoon salt 
- Optional toppings: sliced almonds, dark chocolate chips 
Instructions:
- Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper. 
- In a medium mixing bowl, whisk together the almond flour, baking soda, and salt. 
- In a separate mixing bowl, mix together the almond butter, maple syrup, melted coconut oil, and vanilla extract until smooth. 
- Add the dry ingredients to the wet ingredients and mix until a thick dough forms. 
- Using a cookie scoop or tablespoon, portion out the dough onto the prepared baking sheet. 
- Flatten each cookie slightly with a fork or your fingers, and add any desired toppings, such as sliced almonds or dark chocolate chips. 
- Bake for 12-15 minutes, or until the edges are lightly golden. 
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. 
These cookies will keep for up to a week in an airtight container at room temperature or in the fridge. Enjoy as a healthy treat throughout the week to help you get ready for the days ahead!
